Thanksgiving Pie Egg Rolls
Every family has their favorite ways to repurpose the Thanksgiving leftovers. Sandwiches, soups, and casseroles are always popular. But what about leftover pie? Pie lasts only a couple of days before the crust goes soggy and the filling starts to taste old, and only a few kinds of pie can be frozen. Although I grew up in a big family and Thanksgiving meant several kinds of pie to choose from rather than the standard apple and pumpkin, there were always a few pieces leftover. This year I went a little overboard and made 8 different pies. There were way too many leftovers, and with the price of food, I decided that these yummy pies shouldn’t go to waste. When I used the savory leftovers for my favorite Thanksgiving Egg Rolls with Two Dipping Sauces, I wondered if I could make sweet egg rolls with the leftover pie. The following Thanksgiving Pie Egg Rolls are the delicious result, and are an excellent, as well as quick and easy way to use up those yummy leftovers.

The air fryer makes it possible to “fry” these egg rolls with minimum oil and no lingering stale oil smell in the house. These crunchy egg rolls can be stuffed with any pie – I used sweet potato, apple, lemon meringue, banana cream, chocolate cream, custard, and pecan.

12 Servings

12 egg roll wrappers

2 1/4 cups leftover pie, any flavor
2 to 3 tablespoons vegetable oil

Powdered sugar, for dusting

  1. Lay the egg roll wrappers on a diagonal on a countertop. ””












  2. About 2" in from the bottom point, place about 3 tablespoons pie - filling, cream, meringue, top crust (omit the bottom crust if it's soggy).””












  3. Brush or spray the edges of the egg roll wrapper with water and bring the bottom point up over the filling, tucking it in. ””









  4. Fold the edges over to the center, envelope style. ””









  5. Roll up, pressing on the point to seal. ””


  6. Brush with vegetable oil on both sides.
  7. Heat the air fryer to 390° and set for 10 minutes
  8. Place the brushed egg rolls in the pan of the air fryer and let air fry until crisp, turning once after 5 minutes.
  9. Dust with powdered sugar and serve warm
